Yes, you have many opportunities to sample Seattle's favorite beverage at Sea-Tac Airport. Here are the various coffee vendors in the airport.

EATING IN THE CENTRAL TERMINAL

If time allows, plan on spending a while in the Central Terminal. This expansive area offers ample opportunities for shopping, dining, or enjoying a cup of Seattle's famous coffee. This area offers the widest selection in the airport of places to shop and dine. It is a lovely place to sit and look out at the distant Olympic mountains framed by the airport buildings. The dining options are limited in the satellite terminals and in the concourses so your best bet for eating is to go to the Central Terminal. The dining places in the satellite terminals can get quite crowded with long lines, another reason to go to the Central Terminal.
The Central Terminal offers a number of eating places where you can get take-out for your flight or where you can order and eat in the central seating area. Some places offer seating inside of the restaurant or cafe. There are a couple of places I frequent that I will mention.
Kathy Casey's Dish D'Lish
I like Kathy Casey's. They have a nice selection of take-out sandwiches and salads as well as pastries, soups, and made to order sandwiches. I usually stop here to get my take-out fare for the upcoming journey.
Ivar's Fish Bar
Ivar's is the Seattle restaurant chain that is famous for its clam chowder. Frommer's recently named Ivar's in its list of the ten best airport restaurants.

SHOPPING IN THE CENTRAL TERMINAL
The Central Terminal has several major shops including Borders Books, Made in Washington, Fireworks, and Dilettante Chocolates. For a treat for yourself or for someone else, it is hard to beat the delicious offerings at Dilettante. Their handmade chocolate candy will brighten anyone's day.
